Fruit cookies

A great little treat with a hint of chocolate

Preparation time: 15 minutes

Cooking time: 15 minutes

Serves 6

125g unsalted butter at room temperature

120g caster sugar

2 eggs

220g self-raising flour

2 tbsp unsweetened cocoa powder

100g mixed dried red fruits (such as cranberries and cherries)

60g chocolate chunks

1. Preheat the oven to 180ºC/ 350ºF/gas mark 4. Combine the butter and sugar in a bowl. Add one of the eggs, beating in thoroughly before adding the second. Add the flour, a little at a time, mixing well. Then add the cocoa powder, dried fruit and chocolate chunks.

2. Place a sheet of greaseproof paper on a baking tray. Using two spoons, heap small cookie-sized amounts of mixture onto the tray, leaving space in between to allow for spreading. Bake for 12-15 minutes, checking that the edges of the cookies don’t burn.
