Chocolate risotto

An interesting twist on the savoury dish

Serves 6

1 litre whole milk

70g caster sugar

90g dark chocolate

100g soft dried fruits (such as mango and fig)

50g unsalted butter

190g risotto rice

1. Put the milk and sugar in a pan and bring to the boil, then keep over a low heat so it stays warm. Chop the chocolate and dried fruit into chunks.

2. Heat the butter in a pan, add the rice and stir for 2-3 minutes until translucent. Add a ladleful of hot milk and stir continuously until it is completely absorbed. Continue to add ladlefuls of milk and stir until all the liquid has been used up and the rice is cooked. This usually takes about 20 minutes.

3. Add the chocolate and soft fruits, mix well and serve immediately.
