Jerusalem Artichoke Soup

A hearty soup to stave off winter colds

• 10g butter

• 1 onion

• 400g/500g Jerusalem artichokes

• 300ml vegetable stock

• pinch of sugar

• 300ml milk

• 2tbsp cream to serve

Serves 4 

1) Heat butter in a large pan, add the onions and cook until softened

2) Add the peeled, sliced artichokes and sweat for 10 minutes

3) Add the stock and sugar and season. Simmer for 20 minutes
