Quick and easy summer dish perfect for a dinner party
Ingredients:
6 cups cubed (1/2-inch) seedless watermelon
2 cups chopped trimmed watercress
(about 1 bunch)
3/4 cup (85g) crumbled reduced-fat
feta cheese
1/2 cup thinly sliced red onion
1/4 cup finely chopped fresh basil
3 tbsp finely chopped fresh mint
3 tbsp fresh lemon juice
1/4 tsp salt
Method:
Place all the ingredients in a large bowl and toss gently until combined.
Serve immediately in individual dishes.
