Relax, take it easy, chill. Forget fast food and serve up slow-cooked meats and soups instead. There’s nothing more satisfying or seductive when it’s cold outside.
1) So simple, yet so delicious. Thoroughly clean a bunch of fresh smallish beetroots.
2) Put them in a pan or a foil parcel with a drizzle of olive oil and a splash of water.
3) Wrap up well to prevent steam escaping and cook at gas mark 3/170ºC/325ºF for one to two hours, depending on size.
4) Season with Maldon salt and freshly ground pepper and serve.
