Seared tuna salad with guacamole and soy dressing

Jayne Middlemiss' favourite dinner party starter

Ingredients:

For the tuna 450g tuna fillet 1 tbsp olive oil Salt and freshly ground black pepper

For the guacamole 1 large, ripe avocado 6-8 cherry tomatoes, quartered Half a red chilli, deseeded and finely chopped 2 spring onions, trimmed and sliced 1 tbsp fresh coriander, chopped 1 lime Salt and freshly ground black pepper

For the soy dressing 2 tbsp soy sauce 2 tbsp water 1 spring onion, trimmed and finely sliced Half a red chilli, deseeded and finely chopped tsp wasabi powder

Method:

1. Heat a ridged griddle pan over a medium heat. Meanwhile, rub the tuna fillet with a little olive oil and season well with salt and freshly ground black pepper. 2. Sear the tuna until it is cooked on all sides but the centre is still raw. Remove from the pan and set aside. 3. For the guacamole, peel and remove the stone from the avocado and chop into small chunks. Place in a bowl along with the quartered tomatoes, chopped red chilli, sliced spring onions and fresh coriander. Squeeze the lime juice over the mixture, then season with salt and black pepper. Mix gently. 4. Combine ingredients for the soy dressing in a small bowl. 5. Thinly slice tuna and arrange on plates with a small scoop of guacamole on each. Pour the soy dressing over the top, garnish with any leftover coriander and serve immediately.
