The Yorke Arms' classic recipe for chocaholics
Ingredients:
• 11b 3oz dark chocolate
• 6 eggs
• 4 oz caster sugar
• 2 tsp coffee
• 4 fl oz brandy
• 12 fl oz whipped cream
Chocolate Ganache (topping)
7 oz dark chocolate
4 oz butter
Method:
1) Melt 11b 3oz chocolate
2) Beat eggs and sugar over heat until doubled in volume, add the coffee and brandy.
3) Fold in chocolate into the above and add the whipped cream, place into a silicone-lined square 6/8 inch cake tin
4) Bake at 160 C for ½ an hour
5) Remove from oven and cool
6) Melt chocolate and butter together for the ganache and place on top of cake
7) Cut into triangles when set
