Easy Summer Eating Plan: Day Three

Half way through the week AND peach melba is involved

Breakfast

Large plain probiotic natural yoghurt sprinkled with 2tbsp muesli and 1tbsp chopped fresh fruit. (Have a bag of frozen tropical or fruits of the forest in the freezer – and take out the night before).

Morning Snack

Small bowl melon and small handful of almonds

Lunch

One flour tortilla filled with lettuce, tomatoes, avocado, salsa and sliced chicken

One scoop frozen yoghurt or sorbet

Afternoon Snack

Small slice low fat cheese with 2 low fat crackers, such as Ryvita

Dinner

Turkey Breast Dijonnaise (brush a 125g skinless turkey breast with 1tbsp low fat mayo and 2tsp dijon mustard, bake at 350 for 45 minutes). Serve with steamed broccoli, beetroot and mushroom salad. Dress with 2tsp each of olive oil and lemon juice.

‘5 in 1’ Grilled Peach Melba

Daily Calorie Saving Tip: Poach the turkey breast in stock.

Recipe: Grilled Peach Melba (serves 4)

3 limes (reserve 1, quartered, for garnish)

2 large mugs raspberries

40g castor sugar to taste

2 mugs blueberries

2 mugs blackberries

2 large or 4 small ripe peaches, halved and pitted (skin on)

Frozen natural or vanilla yoghurt to serve.

Preheat a grill. While grill is warming, zest 2 limes and juice them (reserve zest and juice separately) – for speed use pre-juiced limes. Chop enough zest to make 1tsp. Combine ¾ of the raspberries with the half the sugar in a small saucepan. Cook over medium heat until berries start to release juices and break down. Puree in a blender. If fussy about the seeds pour through a fine-mesh strainer to remove them. However, they do add vital fibre! Season to taste with lime juice and set aside. Toss together remaining raspberries, blueberries and blackberries with remaining sugar, lime juice and lime zest and set aside. Grill peaches and lime quarters quickly, until they have grill marks and are warmed through, about 3 minutes per side. Remove from the grill.

To serve

Combine a peach half with small scoop frozen yogurt in the bottom of a shallow dish. Spoon equal amounts of raspberry sauce on top of frozen yogurt and finish with equal amounts of raspberries, blueberries and blackberries. Garnish with grilled lime to be posh!
