Go exploring this region is famous for its 13th-century Cathar castles, such as Montségur, perched high on rocky peaks. You can go skiing in the Pyrenees at Monts d'Olmes, walk along the Sentier Cathar trail, visit prehistoric cave paintings at Niaux, and hit the shops in the arcaded market square of Mirepoix. Good gastronomic buys include cassoulet, goats' cheese, honey and the sparkling wines of Limoux.
