WE STAYED AT...
Château de Camon (00 33 5 61 60 31 23), a former Benedictine abbey in the pretty medieval village of Camon. Beautifully restored by its English owners, this 12-room hotel has magnificent drawing rooms, sumptuous bedrooms, peaceful cloisters and an intimate restaurant. Add to that a gorgeous location, delicious breakfasts, attentive service and a large pool, and it's ideal for a relaxing break. In May, double rooms cost from £97, with dinner from £26 per person.

WE FLEW TO...
Toulouse, then drove south for an hour to the Ariège region, close to the Pyrenees. In May, return flights from London with British Airways cost from £77, including taxes. Other nearby airports are Carcassonne and Perpignan, or for rail services, visit sncf.co.uk. WHILE YOU'RE THERE...
Go exploring – this region is famous for its 13th-century Cathar castles, such as Montségur, perched high on rocky peaks. You can go skiing in the Pyrenees at Monts d'Olmes, walk along the Sentier Cathar trail, visit prehistoric cave paintings at Niaux, and hit the shops in the arcaded market square of Mirepoix. Good gastronomic buys include cassoulet, goats' cheese, honey and the sparkling wines of Limoux.
