Sure Bar, Radisson SAS Royal, Dublin
Sure as in, 'To be sure, to be sure?
Very funny. The Sure bar puts the emphasis on local and traditional brands, but interprets them in a contemporary way. So it's a modern-style bar with a distinctly Irish flavour.
Mine's a pint of Guinness
The cocktails are pretty special, too, having been created by the team behind the Dorchester bar in London. Try The Black Forest, which muddles Connemara whiskey with cherries and chocolate.
Don't tell me, made by leprechauns?
No. But the staff uniforms are by Orla Kiely, and your martini comes in a Waterford Crystal glass.
What about the food?
Bar snacks include local cheeses served with soda bread, smoked salmon and grilled Dublin Bay prawns.
Oh, go on, go on
The nod to localism doesn't stop there. The interior design cunningly picks up on features you'd expect in a traditional pub, but reinvents them for the Noughties. So you'll find Stark-esque fibre-optic lampshades, a beaded bar mirror and clever use of Galway marble.
More importantly, has Bono been?
Not yet. But certain local boy-band members have. American travellers have already found it the only place in town that does a decent Manhattan. Trinity College frat boys, local property tycoons and ladies who lunch are all finding solace in the squishy brown leather chairs.
