Spiced crab crostini
By Kimberley Walsh on Wednesday 4 November 2009
Girl's Aloud Kimberley Walsh shares her recipe for her spiced crab crostini
Makes 24 crostini
Ingredients:
1 thin French baguette
2 tbsp olive oil
200-250g fresh white crab meat
1 large red chilli, deseeded and finely chopped
2cm piece fresh ginger, peeled and finely grated
4 spring onions, finely chopped
2 tbsp chopped fresh coriander
Grated zest and juice of 1 lime
Salt and freshly ground black pepper
Method:
Preheat the grill to the highest setting. Cut the baguette into thin slices (they should be no thicker than 1cm each). Spread them out on a baking sheet and brush all over with a little olive oil. Toast on both sides until golden.
Mix all of the remaining ingredients together and set aside for at least 30 minutes to allow the flavours to mingle. Check the seasoning and spoon a little of the spiced crab mixture onto each slice of toasted bread.
