Soy-Baked Salmon Fillet with Sesame Salad
Ingredients:
2 tablespoons soy sauce
2 tablespoons lemon juice
2 tablespoons mirin
1 red chilli, seeded and finely chopped
4 x 200 g (7 oz) salmon fillets, pin bones and skin removed
200 g (7 oz/11/2 cups) peeled and julienned daikon
1 red capsicum (pepper), julienned
a handful of mint
a handful of mizuna leaves
2 tablespoons sesame seeds
Serves 4
Method:
1. Preheat the oven to 160ºC (315ºF/Gas 2?3).
2. Put the soy sauce, lemon juice, mirin and chilli in a small bowl and stir to make a dressing.
3. Line a small baking dish with baking paper and add the salmon fillets.
4. Pour the dressing over the fish and bake for 20 minutes.
5. Toss together the daikon, capsicum, mint and mizuna and divide among four plates.
6. Carefully remove the cooked salmon fillets from the baking dish using a wide spatula and place beside the salads.
7. Heat a small frying pan over medium heat and fry the sesame seeds until they begin to brown.
8. Sprinkle over the salads and drizzle with the salmon cooking juices.
