Really easy and a good way to use up any leftover cheese from your cheese board

Takes 20 mins
Makes 16 bites

Ingredients:
8 thick slices white bread, crusts removed
50g (2oz) salted butter
225g (8oz) Brie
4 tbsp cranberry jelly

Method:
1. Spread the bread with half the butter. Top 4 slices (unbuttered side) with the cheese and cranberry jelly then sandwich together with the remaining slices of bread (buttered side uppermost). Melt the remaining butter in a large frying pan and fry each sandwich until golden. Cut into quarters and serve whilst still warm.
