1 cup plain chocolate 1 cup unsalted butter, softened 1 cup sugar 3 eggs, beaten 1 cup plus 2 tablespoons flour 1 teaspoon baking powder 2 tablespoons cocoa powder 3 ripe bananas

For the frosting

300gm cream cheese 150gm icing sugar 1 lemon, zested

1. Preheat the oven to 350°F.

2. Melt the chocolate over a bain-marie (or my lazy way of VERY, VERY slowly melting in a microwave).

3. Cream together the butter and sugar until pale. Add the eggs gradually, while beating.

4. Stir the dry ingredients together and fold into the wet mixture. Add the mashed bananas and melted chocolate. Mix well.

5. Bake for 45 minutes. 6. For the cream cheese frosting, place the cream cheese into a mixing bowl. Sift the icing sugar over the cream cheese and add the zest of the lemon. MIx well and liberally top the banana cake with the frosting.
