Tequila prawns with bacon

Ingredients:
24 raw king prawns
6 slices Parma ham, sliced into 4
3 tbsp olive oil
2 cloves garlic, sliced
pinch chilli flakes
1 lemon, zest and juice
4tbsp tequila
garlic mayonnaise, to serve

Method:
1. Wrap each prawn in a piece of the ham. Heat the oil in a pan with the garlic, chilli and half the lemon zest to allow the flavours to infuse. Add the prawns and fry for 2 mins. Add the tequila and cook for a few seconds then remove from the heat.
2. Squeeze over the lemon juice and serve sprinkled with the remaining lemon zest and chives and some garlic mayonnaise.
