Mango salsa

This can also be served with griddled chicken breasts. Don't make the salsa too far in advance as it will become mushy - half an hour before serving is best.

Ingredients: 1 ripe mango, peeled and diced 4 ripe tomatoes, diced 1 small red onion, finely chopped 1 red chilli, deseeded and finely chopped 1 small clove garlic, crushed 1 bunch coriander, chopped Juice of 1 lime Salt and freshly ground black pepper

Method: 1. Mix all of the ingredients together in a bowl, season well and set aside for 30 minutes to allow the flavours to mingle.

2. Adjust seasoning as required with more salt, pepper or lime juice.
