A colourful tasty pasta dish
Ingredients (Serves 4)
• 200g asparagus tips • saffron• 1tsp vegetable bouillon• 150ml white wine• 450g spaghetti• 150ml double cream• 3tbsp freshly grated Parmesan• salt and freshly ground pepper
1) Chop the asparagus stems, keeping the tips whole.
2) Put them in a small shallow pan, with 300ml boiling water. Cook for 3 minutes.3) Remove from the pan with a slotted spoon and set aside.4) Add the saffron, bouillon and wine to the water and boil for 5 minutes.5) Reduce heat and simmer while you cook the spaghetti.6) Return the asparagus to the pan with the cream, Parmesan and seasoning and heat.7) Drain the pasta, divide between bowls and spoon over the sauce.
