Why we should all be eating coconut oil

When Jennifer Aniston was spotted popping coconut oil into her shopping bag, it was hailed as the health food of 2008. But its benefits are well known: used as a cooking or added to smoothies, it is reported to aid vitamin absorption and boost digestion.
Garry Stivens, formerly of Save The Children, believed in its potency so much that he set up coconoil.co.uk, which sells virgin coconut oil from Sir Lanka, providing local farmers affected by the 2004 Boxing Day tsunami with an income. ‘As part of a healthy diet, it can enhance performance and energy,’ he says.
With that kind of testimonial who are we to argue?
